What Makes Hass Avocado Special?
The Hass avocado is the world’s most popular avocado cultivar, accounting for approximately 80% of all avocados consumed globally. Developed by Rudolph Hass in La Habra Heights, California in the 1920s, this variety has become the gold standard for avocados worldwide.
What sets Hass apart from other avocado varieties is its exceptionally creamy, buttery texture and rich, nutty flavor. The flesh has a higher oil content (approximately 18–25% healthy monounsaturated fat) compared to other varieties, giving it that luxurious mouthfeel that has made it a staple in restaurants, cafes, and home kitchens around the world.
The Hass avocado is easily identified by its pebbly, dark skin that turns from green to purplish-black as it ripens — a natural ripeness indicator that makes it convenient for consumers. The fruit typically weighs between 200–300 grams and has a relatively small seed compared to its generous flesh.
Growing Hass Avocado in Bali’s Highlands
Growing high-quality Hass avocados in a tropical region like Bali requires very specific conditions that are only found in the island’s highland areas. Most of Bali’s lowland and coastal regions are too hot and humid for Hass avocado trees to produce quality fruit. However, the Bangli highlands near Mount Batur offer conditions that are surprisingly well-suited to Hass cultivation:
Elevation and Climate: At 800–1,200 meters above sea level, our farm experiences average temperatures of 20–28°C, with cooler nights dropping to 15–18°C. Hass avocado trees require this temperature moderation — they need warmth to grow but cooler periods to set fruit properly. The highland climate in Bangli provides exactly this balance.
Volcanic Soil Excellence: Hass avocados demand well-drained soil with a slightly acidic to neutral pH. The volcanic soil surrounding Mount Batur naturally meets these requirements. It drains efficiently, preventing the root rot (Phytophthora) that is the number one killer of avocado trees in tropical climates. The soil is also rich in the potassium and zinc that avocado trees need for healthy fruit development.
Water Management: While avocado trees need consistent moisture, they are extremely sensitive to waterlogging. Bangli’s seasonal rainfall pattern — wet season from November to March and drier conditions from April to October — provides natural irrigation cycles. We supplement with drip irrigation during dry periods to maintain optimal soil moisture without overwatering.

Our Organic Growing Practices
At Batur Gold, our Hass avocado trees are cultivated using entirely organic methods. We never use synthetic chemicals at any stage of the growing process.
Our avocado grove is managed through careful organic soil building, using compost from local organic waste streams enriched with volcanic rock dust. We employ cover crops between tree rows to fix nitrogen naturally, suppress weeds, and prevent soil erosion on the highland slopes.
Pest management relies on natural predators, neem-based organic sprays when necessary, and maintaining biodiversity on the farm to create a balanced ecosystem. Our trees are pruned regularly to ensure good air circulation, which reduces fungal disease pressure in Bali’s humid climate.
We allow our avocados to mature fully on the tree before harvesting, which maximizes oil content and flavor. Hass avocados are unique in that they do not ripen on the tree — they must be picked and then allowed to ripen off the tree over 4–7 days. We time our harvesting carefully to ensure each fruit reaches consumers at the perfect stage of maturity.
